CHOCOLATE CHERRY CAKE IN A JAR

Chocolate cherry cake in a jarWhen I don’t feel like baking but still want something cake like – think soft cake crumbles and cream together with fruit – I make cakes in a jar! These cute cake jars are always so easy to make and the flavor combos are pretty much endless. Today I wanted to use sweet cherries to make this chocolate cherry cake in a jar.

How to make a chocolate cherry cake in a jar?

Chocolate cookie crumble

It all starts with cookie crumble! No need to have chocolate cookies, graham cookies (digestive biscuits) or similar cookies work well. Just add dark chocolate and a few other ingredients, blend and voila – you have chocolate cookie crumble ๐Ÿ™‚

Or if you don’t have any cookies, no problem. Just make the cookie crumble from scratch using simple pantry ingredients like rolled oats.

Cherry cream and cherries

For this cake cherry jam or cherry marmalade is an essential ingredient. You can make cherry cream simply by mixing vegan whipped cream with cherry jam or marmalade! The result is a sweet and yummy cherry flavored cream.

To enhance the cherry flavor, chop fresh cherries and use it as a layer in the cake. You can also add a dollop of cherry jam or marmelade with the cherries.

Ideally you would make these cakes (without the final touch: piped whipped cream on top) about 30 minutes or an hour before serving to let the flavors really soak and mix together. Just place the jars well covered in the fridge.

This also gives enough time for the jars to cool. Meanwhile melt dark chocolate and prepare to decorate the jars!

I think a delicious melted chocolate decoration on the rim of the jar gives a nice festive touch to these cakes in a jar. When ready to serve decorate with melted chocolate and pipe cherry cream on top. Cake making couldn’t get any easier than this ๐Ÿ™‚

This delicious vegan cake in a jar is easy and quick to make: soft chocolate cookie crumble combined with fresh cherries and cherry cream.

Ingredients
  

Chocolate cookie crumble from scratch

  • 1/4 cups 45 grams dark chocolate
  • 1/3 cups 35 grams (gluten-free) rolled oats
  • 1/4 cups 40 grams nuts such as cashews and walnuts You can also use seeds or more rolled oats.
  • 1-2 tbsp maple syrup
  • 1-2 tbsp almond or cashew butter You can also use coconut oil.
  • pinch of salt

Chocolate cookie crumble from cookies

  • 4 (gluten-free) digestive biscuits or graham cookies
  • 1/4 cups 45 grams dark chocolate
  • 1-2 tbsp maple syrup
  • 1-2 tbsp almond or cashew butter You can also use coconut oil.
  • pinch of salt If needed, depending on the salt level of the cookies.

Cherry cream

  • 2 cups vegan whipped cream
  • 1/4 cups cherry marmalade or jam

Other ingredients

  • 1/2 cup fresh cherries
  • dark chocolate for decoration

Instructions
 

  • For both of the cookie crumbles: blend all ingredients in a food processor until you have a coarse cookie crumble. Start with 1 tbsp of maple syrup and 1 tbsp of nut butter and adjust the ingredients after blending. For a more moist result add more syrup and/or nut butter.
  • Mix whipped cream and cherry jam.
  • Chop cherries and leave two for decoration.
  • Making the layers: first layer is the cookie crumble, next one is chopped cherries (and a spoonful of cherry jam if you like), then cherry cream. Repeat until you reach the end and decorate with piped cherry cream and a cherry on top.
