and ⅓ cups nuts, raisins or other dried fruit to your liking. I used chopped almonds and raisin.
Toppings:
Whipped coconut cream:
½ cup creamy part from a coconut milk can (chilled overnight)
1 tsp agave syrup
½ tsp cinnamon
¼ tsp vanilla powder
+ a few pieces of vegan dark chocolate
Instructions
Preheat oven to 375 F / 190 C.
Chocolate Chip Pizza: Make chia eggs: mix 2 tbsp chia meal with 5 tbsp water. Stir well and let set for at least 5 minutes.
Melt cacao butter in a double boiler until completely liquid.
Mix dry ingredients.
In a separate bowl use a good whisk to mix all the wet ingredients well together.
Combine dry ingredients to wet ingredients little by little mixing well.
Add chopped dark chocolate, nuts, raisins (or whatever you like) and mix into the batter well.
Put the cookie batter onto a baking sheet lined with parchment paper. Flatten it into a round pizza shape.
Bake in the oven for 8-10 min.
The cookie will be very soft straight out of the oven so let it set for a while on the baking sheet. When you chill the cookie in the fridge (overnight) it's easier to cut the cookie into pizza slices.
Toppings: whip the coconut cream ingredients until soft and fluffy. Put a good dollop of cream on top of each pizza slice.
Melt dark chocolate in a double boiler and drizzle "stripes" on top of pizza to decorate it.
