  • Roasted plums
  • about 6 plums
  • ½ tbsp maple syrup
  • ½ tbsp lemon juice
  • ¼ tsp ground cardamom
  • pinch of salt
  • Vegan caramel sauce
  • 100 ml (or ~1/3 cup) coconut cream
  • 2 tbsp maple syrup
  • pinch of salt
  • To serve: rye bread or other bread, vegan cream cheese, roasted plums and vegan caramel sauce.
  1. Preheat oven to 180 C / 360 F.
  2. Roasted plums: Slice plums (and remove the stone)
  3. Place sliced plums and other ingredients into a baking tin and mix thoroughly.
  4. Bake for 30 minutes or until plums are soft and juicy.
  5. Vegan caramel sauce: pour maple syrup and coconut cream into a saucepan and bring to a boil. Reduce heat a bit and let simmer for about 5-10 minutes until the sauce is caramel brown and thick. Add a tiny pinch of salt and taste (add more if you want a proper salted caramel flavor).
  6. To make toast: spread vegan cream cheese on toasted rye bread (or regular toast), add roasted plums and drizzle vegan caramel sauce on top. YUM!
