2-INGREDIENT VEGAN FRUIT PUDDING

Ingredients
  • Basic ingredients:
  • 100 g / 3,5 oz unsalted cashew nuts
  • 150 g / ~5,3 oz fresh pineapple
  • Optional:
  • 1-1,5 tbsp lemon juice
  • 1-1,5 tbsp maple syrup
  • ½ tsp turmeric power
  • dash black pepper
Instructions
  1. Soak cashews for about 10-20 minutes in hot / boiling water.
  2. Chop pineapple into blendable chunks.
  3. Rinse and drain cashews and blend together with chopped pineapple into a smooth pudding.
  4. Taste and add lemon juice, sweetener, turmeric, black pepper or any other spices if you wish.
  5. Enjoy this simple bright colored fruity snack :)
