1 US cup = 2,4 dl 1 dl = 0,4 US cups Prep time + overnight in the fridge
  • Coconut-vanilla overnight oats
  • 1,5 dl / 0,6 cups coconut cream (the creamy part of a coconut milk can)
  • 1,5 dl / 0,6 cups plant-based milk
  • 1,5 dl / 0,6 cups rolled oats
  • 1 tbsp maple syrup
  • ¼ tsp vanilla powder or ½ tsp vanilla extract
  • Cherry chia pudding
  • 1 dl / 0,4 cups cherry juice
  • 4,5 tbsp chia seeds
  • 150 g / 5 oz cherries
  • To serve: something crunchy like granola, nuts, cacao nibs or dark chocolate
  1. Mix all overnight oats ingredients, put in a sealed container (like a glass jar with a lid) and refrigerate overnight.
  2. Mix chia pudding ingredients, put in a glass jar and refrigerate overnight.
  3. Chop cherries and leave a few whole ones for decoration (if needed).
  4. The next day put cherry chia pudding into two serving jars. Add creamy overnight oats, chopped cherries and mix well.
  5. Serve with extra cherries and something crunchy!
You can also mix the cherry chia pudding straight into the overnight oats and refrigerate overnight. I like to have them separate, because I also love the creamy overnight oats with just cherries.
