Celebrating the start of 2022 with a scrumptious gluten-free vegan cookies recipe made in paid collaboration with Finnish Puhdistamo well-being brand. These cookies are made with amazing smooth Puhdistamo hazelnut raw chocolate made from organic Ecuadorian cacao. The chocolate is perfectly sweet for these wholesome cookies with other ingredients such as hazelnuts, oat flour, nut butter and coconut sugar. See the recipe below to start baking!
Gluten-free Vegan Cookies Recipe
This recipe makes about 15 cookies.
- 4 x 36 g Puhdistamo hazelnut raw chocolate (145 g chocolate altogether)
- 1 dl (50g) hazelnuts (roasted, if you like)
- 1 tbsp Puhdistamo chia seeds + 3 tbsp water
- 2,5 dl / 1 cup (125 g) gluten-free oat flour
- ½ tsp baking soda
- ½ tsp salt
- 1,5 dl (100 g) coconut sugar
- 1 tbsp maple syrup
- 1 dl (80 g) nut butter
- ½ dl melted Puhdistamo coconut oil
Preheat the oven to 200 C / 390 F and line a baking sheet with parchment paper.
Chop three (108 g) Puhdistamo hazelnut raw chocolates into small pieces and one (36 g) into larger pieces. Save the larger pieces for later to put on top of the cookie when it’s ready. Grind the hazelnuts into small pieces.
In a bowl, mix the chia seeds and water to form a gel like vegan “egg”.
In another bowl, combine the oat flour, baking soda and salt.
Add the coconut sugar, maple syrup, nut butter, coconut oil, chia egg and ground hazelnuts to the dry ingredients. Mix into a cookie dough and fold in the small hazelnut chocolate chips last until the cookie dough is firm.
Refrigerate the cookie dough for about 15 minutes so it’s easier to form into cookies.
Take about 2 tbsp (30 g) of the firm cookie dough and flatten them on the parchment paper.
Bake the cookies for about 10 minutes or until they are brown on the edges. The cookies will spread in the oven, so I recommend baking them in two separate baking sheets, one baking sheet at a time.
Place a piece of chocolate on top of each cookie.
The cookies are soft and crumbly when warm from the oven, so let them cool down properly on the baking sheet. If possible, put the baking sheet in the refrigerator (or outside if cold) before removing the cookies from the sheet. The cookies will firm up nicely in the cold.
Store the cookies in the refrigerator for up to 5 days.
