Hey there! Today I’m sharing something special – a recipe from Bettina’s (Bettina’s Kitchen) beautiful book Happy Food. Turmeric porridge with warm berries (vegan, gf) is the recipe of my dreams because a) the porridge grain of choice is millet, and I really really love millet, b) turmeric is a very healthy spice, and it’s amazing in many foods and especially in porridge, c) warm berries are the perfect topping in autumn: when fresh berries are no longer available you can use berries from the freezer and warm them up to make a gooey sweet berry compote.
This porridge is the epitome of happy food with simple, good-for-you ingredients. The whole book is filled with delicious vegan happy food recipes, which are great for anyone interested in plant-based cooking. If you’ve been following Bettina’s journey on Instagram or her blog, you already know her wholesome way of cooking: fresh ingredients, easy-to-follow recipes, colorful and fun vegan & gluten-free meals, which are a feast for the eyes.
Happy Food cookbook is divided into recipe sections such as Happy Start: breakfasts, Quick & Simple, Feasts & Sharing, Favorite Basics: plant-based basics to make from scratch like plant-based milks, yogurt and bread. I’ve already bookmarked several recipes for winter: warming coconut chai tea, baked shakshuka with butter beans and Swedish non-meatballz… and many more 🙂
I started following Bettina in 2015 and it’s been a joy seeing her career flourish. She is one of the super talented plant-based foodies I really look up to, and her joyful entrepreneurial spirit shines through in everything she makes. Let’s enjoy some healing porridge ♥
- Healing turmeric porridge
- 110 g / ½ cup millet
- 250 ml / 1 cup water
- 160 ml / ⅔ cup plant-based milk, I used thick oat milk (used in coffee)
- 1 tsp ground turmeric
- pinch of black pepper
- 1 tsp coconut oil
- My additions:
- 1 ripe & sweet pear (you can also use a ripe banana)
- + ¼ cup of plant-based milk
- 1 tsp Ceylon cinnamon
- pinch of salt
- Warm berries
- 200 g / 7 oz mixed berries such as blueberries, raspberries (I also used black currants and strawberries)
- ½ vanilla bean, scraped or ½ tsp ground vanilla
- My addition: anise seeds to give a lovely flavor
- Serve porridge with warm berries and dollop of coconut yogurt
- Chopped nuts for crunch (which I forgot 🙂 )
- Optional: herbs or micro greens
- Place millet and water in a pan and bring to the boil. Let simmer for about 5 min until millet thickens so that almost no liquid is left.
- Add milk, turmeric, pepper and coconut oil and bring to the boil. If you want to make the porridge like I did, also add smashed pear (or banana), cinnamon and pinch of salt. Let simmer in low heat until you get a thick golden porridge, for about 10 minutes. Turn off heat, add a lid on and let set for about 5 minutes.
- Make the warm berries while the porridge is simmering: add all berries and spices to a pan and cook in low heat until berries soften and get syrupy.
- Serve porridge with warm berries, coconut yogurt, and additional toppings of choice.
