My pink rubber boots are made for walking in the forest. That’s what I did one rainy afternoon, and I was happy to find beautiful red lingonberry gems. Although I couldn’t find a lot of perfectly ripe ones, I did gather enough for a special autumn treat: lingonberry coconut porridge with apple sauce.
Lingonberry porridge has a special place in my heart as it’s the porridge I used to eat at my grandmother’s house when I was a little girl. The porridge was almost as pink as my boots, it was fluffy and comforting. The porridge I made is comforting too, but nothing like my grandma’s creation. I bet she would’ve loved my version too.
- [b]Soaking grains to remove anti-nutrients and to make them more digestible:[/b]
- 1/2 cup gluten free rolled oats
- 1/2 cup buckwheat flakes (or 1/2 cup gluten free rolled oats)
- 1 cup water
- 1 tbsp apple cider vinegar
- [br]
- [b]Lingonberry coconut porridge[/b]
- Soaked oats
- 1 cup coconut milk (or other plant based milk)
- 1/2 cup lingonberries (or other berries)
- 2 tbsp shredded coconut or coconut flakes
- 1 tsp coconut oil
- pinch of Himalayan salt
- [br]
- [b]Tahini apple sauce[/b]
- 2 tbsp tahini
- 2 tbsp apple sauce (homemade apple sauce recipe [url href=”https://www.myberryforest.com/perfect-healthy-apple-sauce/” target=”_blank”]here[/url])
- 1 tbsp water (if needed to make sauce more runny)

- [b]Toppings[/b]
- 2 tbsp coconut flakes
- 1/3 cup lingonberries (or other berries)
- [b]Soaking:[/b] Soak oats and buckwheat overnight in water and apple cider vinegar. Drain and rinse well in the morning.
- [b]Cooking the lingonberry coconut porridge: [/b]Cook soaked oats and buckwheat in coconut milk in a pan medium-high heat for a few minutes stirring often until porridge like consistency formed.
- Add pinch of salt, berries, shredded coconut and coconut oil and cook in low heat stirring for a minute or two.
- Smash berries to get a lovely color. Remove pan from heat and let cool for a while.
- [b]Tahini apple sauce: [/b]Mix tahini with apple sauce (with a spoon). Add water if needed.
- [b]Toppings: [/b]Toast coconut flakes on a dry pan until they turn golden brown.
- Swirl tahini-apple sauce into the porridge and add toasted coconut flakes and berries on top.
