Collaboration with Fazer Aito. Midsummer is soon and it’s a tradition in the Nordics to bake a strawberry cake to celebrate. I want to shake up the tradition so I made Neapolitan cake in a jar! This no bake cake is vegan and you can make four cute cakes in 15 minutes.
Classic Neapolitan flavors
What is Neapolitan cake?
Neapolitan cake is a classic layered flavor combination of chocolate, strawberry and vanilla. I think the most used order of the layers is vanilla first, then chocolate and berry layer last. But I’m doing it this way:
Chocolate: The base of my Neapolitan cake in a jar is a chocolatey cookie crumble. It is super easy to make with vegan digestive biscuits or graham cookies and dark chocolate. Just blend all ingredients until you have a coarse cookie crumble, which almost sticks together.
Strawberry: The next layer is what gives this cake its berrylicious flavor: I’m using a new raspberry oat dessert from Fazer Aito. This dessert is like creamy yogurt and is perfectly sweet with lots of berry flavor. To enhance the berry flavor even more and to stick to the Midsummer tradition I added chopped fresh strawberries to the oat dessert. The color of the layer is cute pink, just like Neapolitan pink should be!
Vanilla: The final layer is Fazer Aito Oat for Whipping, a whippable oat cream so perfect and easy to pipe to a tall fluffy tower. If this Neapolitan cake in a jar looks difficult to eat, let me assure you it is not – you just need a long spoon to scoop out all three layers at a time. So good!
Recipe for Neapolitan cake in a jar
First layer: cookie crumble
- 70 g digestive biscuits or graham cookies
- 60 g dark chocolate (I use 70%, but any chocolate works!)
- 2 tbsp coconut oil or nut butter (I recommend cashew or almond butter)
- 2 tbsp maple syrup
- pinch of salt
Blend all ingredients until you have a coarse cookie crumble. Divide the cookie crumble into four jars.
Second layer: berrylicious creamy oat dessert
- 2 packages = 300 g Fazer Aito raspberry oat dessert
- 200 g fresh strawberries chopped
Mix together raspberry oat dessert and chopped strawberries. To enhance the pink color, crush a few chopped strawberries while mixing. Divide the pink berry layer into the jars.
If you would like to make a vegan Neapolitan cheesecake, just blend Fazer Aito raspberry oat dessert, a few strawberries (about 50 g), 1 tbsp lemon, 1 tbsp maple syrup and 1/2 cup soaked cashews until smooth. Mix this with the rest of the chopped strawberries.
Third layer: vanilla flavored whip
- 1,5 dl Fazer Aito Oat for whipping
- 1,5 tsp vanilla sugar or 0,5 tsp vanilla bean powder
Whip Fazer Aito Oat for whipping with vanilla sugar or vanilla bean powder until fluffy. Pipe on top of the berry layer. Enjoy!
