This savory galette is filled with all the goodies: dijon herb cream cheese, summer tomatoes, feta cheese cubes and fresh basil on top. The crust is gluten-free and this whole galette is very easy to make vegan.
How to make a gluten-free vegan galette?
Making a savory galette dough gluten-free is very easy when you have high-quality gluten-free flour. I’m using Viljatuote nettle flour mix, which gives a lovely green color to the crust. The nettle also gives a mild spinach like flavor to the crust which is just perfect with the cream cheese and feta filling.
You can make this galette with a home made gluten-free flour mix too. I recommend a flour mix of light rice flour, oat flour and buckwheat flour or almond flour so that you have rice flour the most, then oat flour and just a little bit of buckwheat or almond flour. Or you can use a store bought all-purpose gluten-free flour mix.
Tip: Add dried nettle or fresh chopped spinach to the dough if you want a green color!
What is special about the crust is that it contains grated cheese in addition to butter (vegan). This makes the whole galette extra scrumptious.
Savory galette filling is easy to make vegan by using vegan cream cheese and vegan feta like cheese cubes. For both the cream cheese and “feta” cubes I recommend Violife brand or similar good quality (and delicious!) vegan cheese.
Savory galette recipe
Prep time about 30 min
Crust
- 2 dl / 140 g Viljatuotteen gluten-free nettle flour mix or all-purpose flour mix or similar gf flour mix
- 80 g butter (vegan) or neutral coconut oil
- 50 g grated cheese
- ¼ tsp salt
- ¼ tsp sugar
- about 1 tbsp water or as much as needed to make the crust stick together
Filling
- 100 g (vegan) cream cheese
- 1 tsp dijon mustard
- ½ tsp dried basil
- ½ tsp dried oregano
- ~100 g cherry tomatoes
- ~100 g (vegan) feta cubes
- ground black pepper
- Fresh basil on top of the galette when it’s ready
Preheat oven to 200 C / 392 F.
Mix all crust ingredients together except water. Add 1 tbsp water and continue adding more 1 tsp at a time until the crust is firm.
Press the crust onto a baking sheet covered with parchment paper. Add a little water on top of the crust to help spread it (if it sticks into your hand). The galette will be a little bigger than half a large baking sheet.
Mix dijon mustard, dried herbs and cream cheese. Spread this on top of the galette crust. Fold the edges of the galette a bit towards the center (just about 1-2 cm) if you want, but this is not necessary.
Slice tomatoes into thin slices and place them on top of the cream cheese layer. Sprinkle feta cubes and ground black pepper on top evenly.
Bake in the oven for 20 minutes. Let cool before serving and add fresh basil on top when ready to eat. Enjoy ♥
