Vegan breakfast meal prepSponsored post in collaboration with Kaslink AITO. My vegan meal prep is all about easy and delicious! I’m prepping two basic overnight oats, which can be pimped as you wish or according to my three yummy recipe suggestions. As the base for my oats I’m using AITO Oat drink and AITO Oat snack (oat “yogurt”). Both of these are gluten-free, which makes these family-friendly breakfasts vegan and gluten-free. Hope you enjoy them as much as my family does!

Vegan breakfast meal prep: overnight oats x 3

I’m super excited to start a new Meap prep series on my Instagram and blog. I’ll share videos, IG Stories and thorough posts with tips and tricks how to make your weekdays a bit easier. Less time in the kitchen, more time and energy for everything else!

Part 1: prepare the base for the overnight oats

AITO Oat drink is the basis of my overnight oats in addition to AITO Oat snack, an oat-based thick yogurt. Actually all you need are these two, gluten-free oats, chia seeds and pinch of salt. As you can see the recipe  is a simple one, but there are a thousand ways to pimp this 🙂 I’m sharing suggestions below!

I prepped two basic overnight oats. For the other base I used a new drinkable AITO Oat snack (“yogurt”). There are two flavors: strawberry-banana and pear-vanilla. My kids love these conveniently packaged cute and delicious snacks. They are yummy on their own and make a good base for overnight oats, too!

Instead of chia seeds you could also use flax seeds or hemp seeds. I prefer chia seeds because they are so versatile in vegan cooking (vegan eggs, pudding..) and they make oats really satisfying and filling.

With this basic breakfast prep you’ll have breakfasts for 3-4 persons for 3 mornings.

Part 2: pimping basic overnight oats

I looooove all kinds of toppings. They turn any basic overnight oats into a luxurious breakfast. The most loved toppings for overnight oats in our household are:

  • berries: kids love raspberries and blueberries and my favorite right now is lingonberries. We use frozen berries in the winter and fresh ones in summer.
  • berry jam: strawberry jam and raspberry jams are our favorite, and they’re also the perfect sweeteners for oats.
  • nut butters: cashew butter is a family favorite and I also love almond butter and peanut butter.
  • nuts: cashews, macadamias and almonds a, ja omat suosikit: saksanpähkinä ja pekaani
  • granola: sometimes I make nuts into a simple pan granola.
  • dark chocolate: I mostly use 80% dark chocolate in our breakfasts. We all love it and it doesn’t taste bitter at all when it’s combined with berries and other delicious flavors.

Two basic overnight oat recipes and three ways to pimp them! Vegan and gluten-free.

Ingredients
  

Basic overnight oats 1

  • 1,5 cups Kaslink AITO Oat drink
  • 1,5 cups Kaslink AITO Oat snack
  • 1,5 cups rolled oats
  • 1/3 cups chia seeds
  • 1/4 tsp salt

Basic overnight oats 2

  • 1,5 cups Kaslink AITO drinkable Oat snack either strawberry-banana or pear-vanilla flavor
  • 1,5 cups Kaslink AITO Oat snack
  • 1,5 cups rolled oats
  • 1/3 cups chia seeds
  • 1/4 tsp salt

Nut butter caramel

  • 1/2 cups nut butter
  • 2-3 tbsp Kaslink AITO oat drink
  • 1 tbsp maple syrup
  • 1/8 tsp salt

Choco-nut mix

  • Chop dark chocolate and nuts and mix them together. You can add quinoa pops or other puffed cereal in the mix too.

Overnight oats 1: berry-caramel

  • 1/3 cups Basic overnight oats 1
  • 1/3 cups Berry oat yogurt I use Kaslink AITO cloudberry Oat snack
  • 1 tbsp nut butter caramel
  • berries such as raspberries

Overnight oats 2: nut butter & jam

  • 1/2 cups Basic overnight oats 2
  • 1 tbsp nut butter caramel
  • 1 tbsp berry jam
  • choco-nut mix

Overnight oats 3: blueberry-cream

  • 1/3 cups Basic overnight oats 1
  • 1/3 cups Blueberry oat yogurt I use Kaslink AITO blueberry Oat snack
  • 1/4 cups vegan whipped cream I use Kaslink AITO Oat for whipping
  • berries

Instructions
 

  • Mix Basic overnight oats ingredients together.
  • Store well covered (in a glass container) in the fridge for up to three days.

Notes

The portions here are quite small because I eat these oats with my small children. We also eat fresh fruit and sometimes toast for breakfast with these overnight oats jars.
If you want to eat a larger portion for breakfast, you could double the size of the Breakfast prep.
If on the third day you don't have much basic overnight oats left, just add oat yogurt (Kaslink AITO Oat snack), and mix well.
