Collaboration with Kaslink AITO. A fun way of eating veggies this holiday season is a vegan holiday wreath platter with all kinds of festive colored vegetables. The best part – perfectly creamy hummus – is in the center for everyone to enjoy. Why not also make a dairy-free almond herb cheese to snack on with delicious fruits, seed crackers and gingerbread cookies?
The best holiday wreath platter
It’s a simple platter with all flavors coming together to form a yummy appetizer salad. I recommend choosing a lot of greens and of course some red to get the festive look. Then there’s of course the creamiest hummus and tangy herby almond cheese.
How to make the creamiest hummus
The creaminess of this hummus is next level! I didn’t use any olive oil to make this, I added AITO Oat cuisine for a super creamy result. Oat cuisine is a neutral flavored cooking cream which can be used in all kinds of cooking. I frequently use it in soups and pasta sauces, but I recommend trying it in dips, too!
Hummus is a really simple and nourishing dip to make, and it brings any platter or savory meal come to life. You just need a good blender to make the hummus silky smooth. Of course a little coarser is yummy too, but for this special creamy hummus I recommend blending until you have the smoothest consistency.
Then just a drizzle of Oat cuisine on top (instead of olive oil) is the perfect finishing touch together with parsley.
Choosing vegetables for the wreath
I suggest at least three different greens for more flavor. I chose arugula, romaine and parsley, but you can choose any greens and herbs you like. If you choose kale, I recommend giving it a good massage before placing it on the wreath.
Broccoli is not only cute in the wreath, it’s also a surprisingly delicious flavor combination with green olives and hummus. I actually started loving raw broccoli again thanks to this wreath 🙂
Dairy-free almond herb cheese
If hummus is not enough to satisfy your cravings for something creamy, I warmly recommend making this easy almond “cheese”. The list of ingredients is not long, and they are not the usual dairy-free “cheese” ingredients:
- Almond flour – fine flour made from blanched almonds
- AITO Oat cuisine – the same I used in the creamiest hummus
- Lemon juice
- Salt and herbs
That’s it!
No need to wait overnight, you can just blend the ingredients and bake them. The longer you bake the more solid consistency you will have. I prefer leaving the cheese very creamy and spreadable, just about 15 minutes in the oven.
Both the vegan holiday wreath platter and almond cheese + cookies and fruits are fast to make and don’t require much work. During holiday time I find recipes like these the best – less time in the kitchen and more time with loved ones.

Vegan holiday wreath platter
Equipment
- High-speed blender for the hummus
Ingredients
Creamy hummus
- 250 grams precooked ready to use chickpeas
- 50 ml aquafaba (the liquid from chickpea can)
- 100 ml AITO Oat Cuisine
- 2 tbsp lemon juice
- 2 tbsp tahini
- 1-2 garlic cloves
- 1 tsp ground cumin
- 1/2 tsp salt
- black pepper
- Oat cuisine and parsley to decorate
Almond herb cheese
- 100 grams almond flour
- 150 ml AITO Oat cuisine
- 2 tbsp lemon juice
- 1 tsp dried thyme
- 1 tsp dried rosemary
- 1/2 tsp salt
- Fresh thyme to decorate
- Serving suggestion: with crackers, gingerbread cookies, chocolate and fruits.
Vegan holiday wreath platter
- creamy hummus
- Romaine lettuce, parsley, arugula or other fresh greens of choice
- Broccoli, tomatoes, green olives
Instructions
Creamy hummus
- Blend all ingredients until silky smooth and add a drizzle of Oat cuisine on top. Decorate with parsley.
- Hummus keeps in the fridge well covered for at least 4 days.
Almond herb cheese
- Preheat oven to 200 C / 392 F.
- Blend all ingredients and pour into a small baking pan lined with parchment paper. Decorate with fresh thyme and bake for about 15 minutes or until cheese has reached the desired consistency.
- Cheese keeps in the fridge well covered for at least 3 days.
