My love for sweet breakfasts is strong. And it grows stronger as the days get darker. That’s why I created vegan pumpkin tiramisu overnight oats – to satisfy my sweet tooth and to make my mornings brighter. The extra coffee kick isn’t bad either!

What’s best: this can be whipped up in mere minutes. And then it’s ready in the morning – you can just grab it and go. Or do what I did: have a slow relaxing morning reading a book (no phone in sight!) and enjoying every spoonful + a big cup of coffee too 🙂
Inspired by pumpkin spice lattes
Originally I was going to make plain tiramisu overnight oats, but I had leftover pumpkin puree, saw pumpkin spice lattes on Instagram and thought it would be totally fun and yummy to combine tiramisu and pumpkin.
A pumpkin tiramisu cake would’ve been even better but although I love baking, sometimes I LOVE lazy sweet treats even more 🙂 And especially sweet treats for breakfast!
Only 7 ingredients and spices!
This recipe is not complicated, although the layers may make it seem so. The ingredient list is pretty short and simple:
- oats
- plant milk
- coffee
- almond butter
- pumpkin puree (sweet potato works too!)
- maple syrup
- coconut yogurt

- [b]Overnight oats:[/b]
- 1,4 oz / 40 g (a bit less than 1/2 cup oats) rolled oats
- 1,4 oz / 40 g (a bit less than 1/4 cup) pumpkin puree
- 1/4 cup / ~50 ml thick oat milk or other plant-based milk of choice
- 2 tbsp (strong) coffee
- 2 tbsp almond butter
- 1,5 tbsp maple syrup (or sweetener of choice, to taste)
- 1,5 tsp Ceylon cinnamon
- 1/4 tsp ground ginger
- pinches of: nutmeg, cloves, allspice
- two pinches of salt

- [b]Orange layer:[/b]
- 3,5 oz / 100 g coconut yogurt (unsweetened)
- 3 tbsp pumpkin puree
- 2 tsp maple syrup
- [br]
- [b]White layer:[/b]
- 3,5 oz / 100 g coconut yogurt (unsweetened)
- 2 tsp maple syrup
- Ceylon cinnamon
- Mix all overnight oat ingredients in a bowl. Add more sweetener / spices to taste. If you have pumpkin spice mix, you can also use 1 tsp (or more) instead of the spices mentioned above.
- In another bowl whip the orange layer together until smooth.
- Also mix the white layer in a separate bowl.
- In a jar: add oat layer, orange layer, oat layer and then white layer + cinnamon on top.
- Put in the fridge overnight and enjoy in the morning.
