Whipped berry porridge
Whipped berry porridge is a traditional fluffy Nordic porridge, which is usually made of semolina and berries. This time I made a gluten-free version.
- 4 cups + 1/4 cups water
- heaped 1 cups + 3/4 cups berries such as raspberries
- 1/4 cup sugar
- 1/4 tsp salt
- 1 cup + 1/4 cups gluten-free oat bran
- For serving: berries, sugar, thick plant-based milk (optional)
Bring water, berries, sugar and salt to a boil.
Add oat bran and let bubble slowly in medium heat stirring every now and then for 10 minutes.
Let porridge cool (outside if possible) for at least 20 minutes or until cooled.
When cooled whip porridge with a hand mixer or stick blender until air bubbles start to form. Continue whipping until porridge is fluffy and berries are mashed.
Serve porridge with sugar, thick plant-based milk and more berries.
